Banana and Peanut Butter Green Smoothie

I have to admit that this smoothie is one I come back to on a regular basis.  I just love peanut butter in smoothies! The banana, peanut butter, date and the small amount of raw cacao in this smoothie just work brilliantly together.  Plus, the subtle addition of greens adds extra goodness to your meal.  It is smooth, creamy and so delicious, perfect for a post-workout snack. I never miss dairy now that I have beautiful drinks like this to enjoy.  See the note down the bottom if you want to transform this smoothie into a paleo-friendly banana and nut butter green smoothie.

Banana and Peanut Butter Green Smoothie

Ingredients

  • 1 cup of coconut water
  • 2 frozen bananas, cut into chunks
  • 1 medjool date
  • 2 tablespoons peanut butter
  • 1 tablespoon raw cacao powder
  • 1 tablespoon mesquite powder
  • 1 large handful of organic baby spinach

Method

  1. Place all of your ingredients in a blender and blend until smooth and creamy.  If using a Thermomix, blend on speed 8 for 2 minutes.

Enjoy straight away.

Note, that if you want to transform this into a paleo smoothie, then omit:

  • the peanut butter – add 2 tablespoons of almond or other nut butter instead; and
  • the mesquite powder – add an extra medjool date instead.
