Four Minute Quinoa Flake and Date Porridge

Every now and then I feel like a bowl of porridge but, alas, oats just don’t sit well with me.  So, say hello to quinoa flakes!  These are a great replacement for oats when you want to eat some warming porridge.

I love the sweetness of the dates in this porridge and the beautiful spice from the cinnamon.  The best part about this recipe is how quick and easy it is.  In fact, it takes just 4 minutes to make the porridge once you have the ingredients in the pot.  To show you just how easy it is, here’s a video I made this morning.

Four Minute Quinoa Flake and Date Porridge 

Serves 1

Ingredients

  • 1/3 cup organic quinoa flakes
  • 1/4 cup dried dates, chopped
  • 1 teaspoon ground cinnamon
  • 2/3 cup organic coconut milk
  • 1 teaspoon organic or 100% pure maple syrup (optional)
  • Fresh fruit, nuts and extra coconut milk to serve

Method

  1. Place all of your ingredients in a small saucepan and heat over medium heat, stirring regularly, until the porridge begins to bubble.  
  2. Turn the heat down to low immediately and continue stirring, ensuring the porridge does not stick on the bottom of the pan.  
  3. Continue to cook until the porridge thickens and the quinoa flakes absorb all of the coconut milk.

The recipe above is for one person.  However, if you want to make this for more people, simply increase the amount of quinoa flakes by 1/3 cup and the amount of coconut milk by 2/3 cup for every extra person.  For example, if you want to make this for 2 people, then add 2/3 cup quinoa flakes and 1 and 1/3 cups of coconut milk.

Serve straight away with cut up fruit and some nuts of your choice scattered on top.  I served mine this morning with cut up banana, goji berries and macadamia nuts, plus some extra coconut milk.
