Salmon and avocado salad for one

It can be really tempting to grab something quick on the run if you're having a busy day, or maybe even not eat at all. Maybe you want to grab that high-sugar, sweet treat to give you a sugar hit to keep you going. Sound familiar?

If this is you, then listen up because I have some great news! Eating good food doesn’t need to be complicated. In fact, eating well can be really simple and easy, and my delicious salmon and avocado salad for one proves it. It's a quick and simple meal to make when you need to nourish your body with some good food and you only have a few minutes to get the food prep done.

Even if you’re running short of time, you can still eat really well. It only took me three minutes to put this simple lunch together, so you can too! 

Salmon and avocado salad for one

Ingredients

  • A small can of salmon in brine (95g), drained
  • Half an avocado, cut into chunks
  • Two large handfuls of rocket leaves, washed
  • 1 teaspoon of capers with 1 teaspoon of the caper vinegar
  • A drizzle of good extra virgin olive oil
  • Salt and pepper to taste

Method

Place all of these ingredients in a bowl. Add salt and pepper to taste and enjoy.

Simple and delicious, and full of goodness to keep you going.
